A recipe perfect during the summer: Chocolate ice cream!
This ice cream is suitable both for hot days AND the bikini body (at least better than normal ice cream). The recipe mainly consist of bananas and a minimal amount of sugar. No heavy whipping cream or whole milk!
The ice cream can be a bit chocolate-bitter and is therefore most delicious in company with fresh fruit and muesli. And yes, the muesli in the picture is vegan, too!
The ice cream can also be made without an ice cream maker, then you’ll just have to put the mixture in the freezer and stir once in a while to make give it it’s airy texture.
Vegan Chocolate Ice Cream
- 6 bananas
- 2 dl coconut milk or coconut water
- 1 ⅓ dl cocoa (8 tbsp)
- 2 tsp vanilla extract
- 2 tbsp sugar
- Blend all the ingredients together
- Transfer the mixture to your ice cream maker and freeze according to the ice cream machines' manufacturer’s instructions
- Transfer the ice cream to a airtight box and put it in the freezer for at leased 20 min before serving to make sure that it is frozen
