Last year I made a lot of things with rhubarb, so this year I was running a little bit out of ideas. But one of the things I have not posted, yet, is juice. So here is a delicious recipe on rhubarb juice with ginger.

Rhubarb Juice
Ingredients
- 500 g rhubarb
- ¾ l water
- 125 g sugar
- 15 g ginger fresh
- 1 tsp vanilla extract
Instructions
- Rinse rhubarb and cut them into smaller pieces
- Put all ingredients in a pot and cook for 10 minutes under a lid
- Remove the pot from the heat and let it cool
- Sift the juice through a cotton cloth placed in a sieve
- Pour the juice into a bottle and store in the refrigerator
- Serve the juice in a glass with a few ice cubes
