Banana muffins are easy and fast to make and sooo delicious. I often find that over-ripe bananas are a perfect excuse to bake a cake. Over-ripe bananas are great in cakes because they are easy to mash, full of sugar, and doesn’t really work as a raw snack anymore.


Vegan Banana Muffins
Equipment
- Muffin pan
- 12 cupcake paper liners
Ingredients
- 3 bananas
- 75 g vegan butter preferable at room temperature
- 120 g flour
- 2 tsp baking powder
- 125 g sugar
- 1 tsp vanilla extract
- 75 g dark vegan chocolate
Instructions
- Mash the bananas with a fork
- Chop the butter
- Mix banana and butter in a bowl
- Mix flour and baking powder
- Mix banana/butter, flour/baking powder, sugar, and vanilla in a large bowl
- Chop the chocolate (not too finely) and add it as well
- Put cupcake liners in a muffin pan
- Pour dough into each cupcake liner till they are each full
- Bake the muffins in the oven at 175° C for 25-30 min
