Here is one last recipe from the blackcurrant season: A delicious and easy blackcurrant cake with the perfect combination of sweet dough and berries with a sour flavor profile.
Blackcurrant Cake
Equipment
- Cake tin (25 cm in diameter)
Ingredients
- 270 g sugar
- 3 dl plantbased milk e.g. oatmeal milk
- 225 g plantbased butter
- 300 g flour
- 1½ tsp baking powder
- 350 g blackcurrant
Instructions
- Whisk the sugar and milk together in a bowl
- Melt the butter in a pan and whisk it into the batter
- Stir flour and baking powder together
- Add flour to the dough and mix thoroughly
- Grease the cake tin with a bit of vegetable oil
- Pour the batter into the cake tin
- Rinse the blackcurrants, remove any stems
- Pour the blackcurrants on top of the dough and press them lightly into the dough
- Bake the cake at 200° C for 35 min

I tried using butter and almond flour and it did not set at all. Such a bummer. By bad for altering the recipe
