Autumn is quietly sneaking up on us and the green, bright, fresh, hot summer is in retreat. But we can still capture some of the summer vibe in the food, that we eat. So, here is a recipe where the freshness of summer is stored in a salt that can be used to season autumn dishes.
This recipe can be used with either lime or lemon (the same amount of citrus zest must be used, but remember that lemons are larger, so you need fewer lemons to make 2.5 teaspoons zest than if you use lime).
I apologize that the quality of the pictures are so low this time – i accidentally forgot to take pictures of the final products. So I had to use some snap shot from the video showing how to make it (on instagram).
Citrus Salt
Ingredients
- 2½ tsp lime zest from 5 limes
- 2½ tbsp coarse salt
- A couple of handfulls of fresh thyme
Instructions
- Rinse lime
- Grate the zest off of the limes
- Combine lime, salt and thyme in a food processor or blender and blend until it has become a green uniform (in texture) salt mixture
- Spread the salt on a tea towel and let it dry (there may be some moisture from the thyme and lime in the salt) for a few days
- Pour the salt into a small jar to store it
