Dumpster dived some strawberries the other day. And what better way to use them than in a valentines-inspired muffin?
These are really easy and quite fast to make, so, they are perfect for anyone who wants to share a delicious snack with his/her significant other on Valentines Day.
Vegan Strawberry Muffins
Equipment
- Muffin pan
- 12 cupcake paper liners
Ingredients
- 2 tbsp flaxseed
- 6 tbsp water
- 125 g sugar
- 1 dl plantbased milk
- 1 pinch lemon juice
- 50 g coconut oil
- 200 g flour
- 1 tsp baking powder
- 300 g strawberries
Instructions
- Blend the flaxseeds and soak with water for about 10 min
- Whisk sugar and flaxseeds creamy in a bowl
- Add the milk and lemon
- Melt the coconut oil on the stove in a saucepan and whisk it in the dough
- Mix flour and baking powder together and add it to the dough
- Rinse the strawberries and remove leaf and stem and cut them into smaller pieces
- Stir strawberries into the dough
- Put cupcake liners in a muffin pan
- Pour dough into each cupcake liners till they are full
- Bake the muffins in the oven at 175° C for 45 min
