A few months ago I was at Ark in Copenhagen, which makes really delicious vegan food inspired by Nordic nature. And for one of the desserts we had pickled celery with blackcurrant sorbet on top. And I’ve been in love ever since! So here is a super delicious and easy recipe on pickled celery. Eat with ice cream (example below). Can be used in the salty kitchen as well as a balance.
Sweet Pickled Celery
Equipment
- ¼ L jar
Ingredients
- 200 g celery
- 100 g sugar
- ½ dl water
- 2 tbsp white wine vinnegar
- ½ tsp lemon juice freshly squeezed
Instructions
- Mix sugar, water, vinegar and lemon juice and boil in a saucepan until the sugar has dissolved
- Chop celery into small pieces and add to the saucepan
- Cook celery for 3-5 min until they have softened a little (but still is firm)
- Immediately pour into atamon-rinsed jam jars and close the lid
