Oh, how I love summer with all the berries in season. This year I have used the red currant from the garden to make a beverage. I like my juice relatively sour, so you might need to adjust the amount of sugar, if you have a sweet tooth!
Red Currant Juice
Ingredients
- 1 kg red currant
- 1 l water
- 100 g sugar
- 1 tsp vanilla extract
Instructions
- Rinse the red currants and put them in a pot of water and bring to a boil
- Let currants and water simmer under a lid for about 20 min
- Sieve red currants through a cotton cloth placed in a sieve
- Pour the sifted juice in a clean saucepan with sugar and vanilla essence
- Bring the juice to a boil and simmer for 10 minutes under a lid
- Pour the juice into a bottle and store in the refrigerator
- Serve in a glass with 1:1 of water versus juice
