Lilac Juice

Ingredients
  

  • 2 l lilac about 10 bundles
  • 500 g sugar
  • 5 dl water
  • 1 lemon

Instructions
 

  • Avoid rinsing the lilacs, as this removes some of the flavor
  • Boil water and sugar in a small saucepan until the sugar has dissolved
  • Remove the stem from the lilacs and put it in the sugar water
  • Squeeze lemon juice from the lemon and grate the zest of half of the lemon
  • Add lemon juice and lemon zest to the sugar water and stir well
  • Put the lid on the saucepan and put it in the fridge for the next 2-3 days
  • Strain the juice through a strainer to remove the lilacs and lemon zest and pour the juice into a bottle
