Blend the flaxseeds and soak with water for about 5 min
Whisk sugar and flaxseeds creamy in a bowl
Chop the butter and whisk it creamy with the sugarwater
Granulate the zest of the lime and squeeze juice of half of the lime
Add the lime zest and juice as well as coconut to the dough
Mix flour, baking powder, and salt in a new bowl
Stir the flour mixture into the dough
Roll the dough to balls the size of table tennis balls and put them on a piece of baking paper and squeeze them flat
Bake the cookies in the oven at 200°C for 10-15 min
Let the cookies cool
