Citrus Salt

Course Dinner

Ingredients
  

  • tsp lime zest from 5 limes
  • tbsp coarse salt
  • A couple of handfulls of fresh thyme

Instructions
 

  • Rinse lime
  • Grate the zest off of the limes
  • Combine lime, salt and thyme in a food processor or blender and blend until it has become a green uniform (in texture) salt mixture
  • Spread the salt on a tea towel and let it dry (there may be some moisture from the thyme and lime in the salt) for a few days
  • Pour the salt into a small jar to store it
