Blackcurrant Cake

Equipment

  • Cake tin (25 cm in diameter)

Ingredients
  

  • 270 g sugar
  • 3 dl plantbased milk e.g. oatmeal milk
  • 225 g plantbased butter
  • 300 g flour
  • tsp baking powder
  • 350 g blackcurrant

Instructions
 

  • Whisk the sugar and milk together in a bowl
  • Melt the butter in a pan and whisk it into the batter
  • Stir flour and baking powder together
  • Add flour to the dough and mix thoroughly
  • Grease the cake tin with a bit of vegetable oil
  • Pour the batter into the cake tin
  • Rinse the blackcurrants, remove any stems
  • Pour the blackcurrants on top of the dough and press them lightly into the dough
  • Bake the cake at 200° C for 35 min
